Smothered Turnip Greens

Turnips Resting in a Bed of Smothered Greens

THE GOODS
Pot, large 5 Quart +
Salted or Unsalted Butter ½ stick, 4 Tablespoons, cut into 6 slices.
Pecan Oil or Vegetable Oil, 2 TB
Turnip or Mustard Greens, frozen (Southside produce, Perkins Rd, bag the size of a large loaf
of Bunny Bread). Entire bag. OR Fresh greens.
Turnip bulbs, 8 to 10 nice sized, each cubed into 8 to 12 pieces
Onions, white, ½ large bag frozen (Southside also has these). OR fresh white onion, 6 to 8.
Smoked Sausage, any inexpensive moist round sausage 28+ oz, diced into half-moons.
Honey ham, thick slice, Kentucky Legend® Brown Sugar Smoked or Honey Ham
(1/4 ham type shrink wrapped ham sold pre sliced & sealed) 3 to 4 cups diced.
Frugé Premium Cajun Seasoning® 1 to 2 Tablespoons or to taste
Black pepper, 1 TB
Salt, 1 tsp
Chicken or Beef bouillon, 1 to 2 TB
Honey, 2 to 4 TB
Hot Water, 4 to 6 Cups

THE DO’S
On the range, use your large pot, medium heat, and add your oil.
Sauteed your onions, salt them, 5 minutes.
Add the ham, Sautee for 5 minutes.
Add the sausage.
Add the turnip bulbs and season with 1 TB Frugé Premium Cajun Seasoning®
Layer greens, onion, greens, onion, till all are used.
Add the slices of butter on top
Add the black pepper on top of the bottom slices.
Add the remaining Frugé Premium Cajun Seasoning®
On the side, Use the 4 to 6 cups of hot water and thoroughly mix in your bouillon. Add to pot.
Cook down for 45 minutes to 1 hour on medium heat, stir.
Add the honey to taste, half of it.
Cook for another 30 minutes.
Add the rest of the honey unless desired balance has been met, or additional honey
depending.
Cook for another hour on low to medium low heat, stir.
Lastly, season to taste.
